Veggie Frittata

Company is gone. Yay! Back to reality. ;)

Dinner tonight was a Veggie Frittata with broccoli, Avocado, spinach and topped with cheese and salsa.
















Veggie Frittata
Veggies Chopped
Eggs
Cheese

Soften up your veggies a bit by cooking them in a pan with a little butter or olive oil. Wisk eggs in a bowl and then pour into pan and cook until done. Top with some cheese and Salsa.

I've been cooking breakfast for Cam in the mornings - I'm thinking this will be a nice change for him!
