Chicken Enchiladas


Tonight we had chicken enchiladas. I have never made these before but they turned out pretty well. We had Spanish rice on the side. For a recipe I did some searching on the internet and came up with some ideas on how to make them. We all ate them even the girls. I was surprised but they didn't seem to mind the heat from the green chiles.

green chilis are nothing. next time try some Chipotle peppers (hehe, if you dare). we make enchiladas/burritos/mexican lasagna here ALL the time: it never goes to waste
