Meatless Meatball Subs (w/cheese), Rosemary Red Potatoes and Green Beans.
The meatless meatballs came from Nate's. They aren't organic but they freaking ROCK! The first time I had them I stopped eating them and went to check the package to make sure they really were meatless -- they are that good.
Please Note: Each boy only ate half of a sub.

Granola Bar topped with fresh fruit.
This is pretty simple. You need a REALLY sharp knife (I use one of my husband's scary sharp chef knives) and cut a granola bar in half lengthwise. Lay the two pieces across the plate.
Then top with whatever fruit you want. In this case I have bananas, strawberries, blackberries, grapes and blueberries. Sometimes I top it with a little bit of organic vanilla yogurt to add a sort of "whip cream" feel.
Tomato, Mozzarella and Basil salad (from yesterday)
Someone asked for the recipe for that TMB salad, and well really it's very simple. The key to a good TMB salad is the cheese. You simply cannot skimp. If you buy cheap Mozzarella it will not have good flavor. Do yourself a favor and spend the money to get real fresh good mozzarella (I usually spend a little more than a dollar an ounce for the mozzarella).
Then just slice up the cheese, tomato, and basil. Place it in a circle and lightly salt the tomato (LIGHTLY) it will help make the tomatoes start to expel some of the water and when it mixes with the olive oil it tastes so good! Toss on the fresh basil. Drizzle some olive oil across the "circle" of salad. And there ya go. Heaven on a plate.

Nate's Italian Meatballs
Organic Marinara Sauce
Sub Roll
Mozzarella Cheese
Combine Meatballs with Marinara sauce and cook on medium until warmed through. Place meatballs on the sub roll, top with cheese. Enjoy!
Rosemary Red Potatoes
Fresh Rosemary
Baby Red Potatoes
Olive Oil
Kosher Salt
Preheat oven to 375 F (190 C). Slice potatoes in chunks and place in a bowl. Mince up 2 sprigs of Rosemary and place in the same bowl as potatoes. Lightly coat/mix with olive oil. Lightly coat with kosher salt. Place in a non-stick pan into oven until done (30 minutes-ish). I usually stir the potatoes in the pan after about 15 minutes to help prevent sticking.

I do love me a meatball sub :) I like the choice of potato that you put with it!
for those that read your blog and can't find nates or would venture into turkey meat balls, trader joes has both a vegetarian and a turkey meatball. I've only tried the latter and it's fab. this is a very good idea and I'll certainly do the sub idea. I'm having a 'why didn't I think of that?' moment!
THANK YOU for the recipes! You *know* I've been trying to get my family to eat healthier, and I think it might be time to *sneak* some meat substitutes in. Nate's might just be the trick.
One of the things I find really appealing about your dinners has been the visual interest. Feasting with your eyes is almost as good as feasting with your mouth!

Wow, what a good idea! The hubby loves meatball subs at deli, but I never thought how easy they would be to make at home. And WOOHOO, three places in town carry Nates!
